🥚 A Family Favorite Breakfast
These cheesy scrambled eggs are egg perfection! Soft, buttery folds of eggs swirled with gooey cheese – never dry, never watery. Just pure, cozy comfort in a bowl (or on a plate, depending on your toast situation!).
My kids asked for this breakfast so many times when they were growing up. I’d crack the eggs, melt a little butter, and toss in a slice of American cheese – nothing fancy, but oh, so delicious. You can use any cheese you like, but there’s just something nostalgic about that melty, creamy American cheese doing its thing.
Grace even asked me to make them for her as an adult – before we discovered her egg allergy (the heartbreak!). She told me she tried to recreate them herself but couldn’t quite get the same result. “They taste better when Mommy makes them!” she said. Aww. Sometimes the secret ingredient really is love – and a little butter.
Serve these eggs with your favorite side or a couple of slices of buttery toast, and you’ve got a five-minute breakfast that feels like home.
🍳 Ingredients
- 2 to 3 large eggs
- Salt, to taste
- Black pepper, to taste
- 1 tablespoon butter
- 1 slice American cheese (or any cheese you love! Cheddar, Colby Jack, or even a sprinkle of shredded mozzarella all work beautifully.)
🧈 Instructions
- Crack and whisk: In a small bowl, whisk the eggs with a pinch of salt and pepper until smooth and slightly frothy.
- Melt the butter: Warm a nonstick skillet over medium-low heat. Add the butter and let it melt slowly – no rushing!
- Add the eggs: Pour the eggs into the pan. Let them sit for just a few seconds, then start gently stirring with a spatula, pushing the eggs from the edges toward the center.
- Add the cheese: When the eggs are soft and just beginning to set, tear the cheese into pieces and stir them in. The cheese will melt into the eggs, making them creamy and luscious.
- Finish softly: Remove from heat when the eggs still look a touch shiny – they’ll finish cooking from the residual heat.
- Add salt and pepper, if you’d like. We like!
Serve immediately with toast, fruit, or even a side of crispy bacon if you’re feeling fancy!
