Classic Meatloaf

Nothing like a tasty meatloaf! Add baked or mashed potatoes with your favorite veggies or a side salad and you have a classic meal!

ingredients

  • 1 small onion, diced
  • 1 lb of ground beef
  • 2 eggs, beaten
  • 1 cup of plain bread crumbs
  • 1 tsp of Italian seasoning
  • 1/2 cup of ketchup
  • 3 tbsp of Worcestershire Sauce
  • 1/2 cup of milk

 

Topping

  • 1/4 cup of ketchup
  • 1/2 cup of grated pecorino romano cheese

 

directions

  1. Heat oven to 350°F.
  2. Cook diced onion on low heat until soft.
  3. Take off heat and let cool.
  4. Mix dry ingredients (beef, bread crumbs, Italian seasoning).
  5. Add wet ingredients one at a time to the dry mixture.
  6. Add cooled onions.
  7. Mix together, evenly distributing the ingredients.
  8. Form a loaf on a cooking sheet or pan.
  9. Spread ketchup over the top, spreading it evenly with a spoon.
  10. Sprinkle the cheese on top of the ketchup.
  11. Bake in oven for approximately 55 minutes, or until meat thermometer inserted in center of loaf reads 160°F.
  12. Let cool and serve!

I use my clean hands to mix the ingredients in this recipe. I find that they get evenly distributed well and I can then form the loaf with my hands with ease.

I also don’t use a loaf pan. It’s just a preference, but I find that if there is any grease from the beef, it will move away from the loaf easily if it has room to move.

I also use lean beef, if possible. Cuts down on that grease!


And let’s talk about meat thermometers. My husband got me a FABULOUS one for a Christmas gift and it works amazing. It’s a bluetooth one – all you have to do is stick the stick inside the meat and follow it with the app on your phone. It’s cordless and amazing:

The app will give you preferred temperatures for whatever protein you are cooking (and it has “meatloaf” in the beef category) and you can manually change the “done” temp if you need to. These work amazing!!
