I am jonesing for a tomato toast sandwich right now. First of all, those things taste SOOOOO good. Growing up, my Dad made them all the time, so now I always think of him when I make them.
But what exactly IS a tomato toast sandwich? Yup, it’s as simple as it sounds. All you need is your favorite bread, some wonderful, ripe tomatoes, your favorite mayonnaise and salt & pepper. Boom.
I think what makes or breaks a fabulous tomato toast sandwich is the quality of the tomato. It’s gotta be one that is in season (here in Connecticut, that means a summer tomato from a local farm!) You can use a tomato from your local supermarket, but alas, it wont be what I’M jonesing for! Many store tomatoes are shipped in from some other part of the country and by the time you get it to your kitchen, it’s a mealy fruit with not much flavor. Do me a favor, when you have delicious tomatoes in your house, WHENEVER you do, TRY a tomato toast sandwich. Really.
I toast whatever bread I have on hand, shmear a good amount of mayo onto those 2 slices of toast, slice that tomato THIN, pile them onto those slices of mayo toast, shake some salt and pepper on them and create a sandwich promptly.
Then eat it. You will thank me.
