ingredients
- 1 package (10oz) frozen spinach, thawed
- 1 package (8oz) of cream cheese
- 1 onion, diced
- 1 tomato, diced
- 1 cup shredded cheddar cheese
directions
- mix all ingredients in a microwavable bowl
- microwave for 10 minutes
- stir and microwave for a few more minutes if needed or desired (you want that cheese to be melted and gooey!)
- serve with your favorite chips or veggies

*First of all, do NOT hesitate to double this recipe. It is a crowd pleaser and it goes FAST. And it keeps in the fridge for a reheat the next day!
*So I acquired this recipe from my mother-in-law years ago. She would make it every holiday season, and my kids LOVED it. They always asked for it and fell into it every Christmas Eve, when the whole family would get together for “The Feast of the Seven Fishes.” Yup, I married into an Italian family! Nah, this recipe isn’t Italian or filled with fish, but it’s still a great one!
I watched my mother-in-law whip this dip up one Christmas Eve and I said to myself, “self, this is easy-peasy and you should make it at home!” And I have made it EVERY year since then!
My grown kids actually still request this one. It’s quick, easy and great for any gathering!
